She also enjoys brewing up old favourites, such as quince jam or japonica apple jelly.
Pam, who lives in Kaitaia, started cooking part time 19 years ago, so she could sell at the local market. Since the beginning of 2005 she’s gone full time. Carrington Estate uses her products, and the chefs at Kauri Cliffs raved about them at a recent cooking class.
Pam also heads to Kerikeri every alternate Sunday to sell at the Bay of Islands Farmers’ Market. It’s not hard to spot her stall – just look for a red awning, the distinctive red and white check tablecloths and the dazzling array of brightly coloured jars, all carefully arranged on display.
She also sells a selection of her baking, anything from traditional Dutch wine wafers to kumara and macadamia cakes.
Kitchen Fourteen, as her business is known, is so named as it’s the 14 th kitchen she has worked in. In fact, she’s converted her laundry so she could have her own registered kitchen at home.
